Uganda broccoli refers to a cabbage-family vegetable with a distinctive solid head that is made up of flower shoots. Its flower heads can be just one huge mass or many sprouts that form a solid umbrella over the stalk that is also eaten. Though it is a major temperate regions’ vegetable, it also does well in the tropics, a reason it is a common find in Uganda.   The word itself derives from its appearance, which in Italian roughly translates to the flowering upper portion of cabbage. It is possible to consume uncooked or in boiled form.

Its origin may have been in the Mediterranean region around 500 B.C.  An important crop even to royalty in Roman times, it reached England as late as the 1750s A.D. From here it spread to other parts of the world including the United States and Africa.

The consumption of broccoli provides the body with about 148 percent of the daily value of vitamin C, which boosts immunity. The level of dietary fiber is 10 percent of the daily bodily needs while that of vitamin B-6 is 10 percent. The vitamin A content for good eyesight is 12 percent of the daily value while the level of magnesium stands at 5 percent.

We source our vegetables from the western wetlands of the country, particularly in Mbarara. Family growers in this part of Uganda grow some varieties of broccoli including the Arcadia and Emperor cultivars. The growers use organic fertilizers including farmyard manure which they apply when the plant reaches 6 to 8 inches in height. Because all of our growers own about two acres of land, they can manage the entire crop for consistent results.

We harvest Uganda broccoli when it is just past its second month and a few days after planting the seeds. Our skilled hands only go for the plants that are yet to flower, as by then the crop usually has formed a solid head. We do our harvesting at dawn to temper the vegetable’s taste, which is normally at its most sumptuous when there is no sun. Our workers use sharp knives to cut the stalk of the primary head in a diagonal slice some 5 to 8 inches beneath the head.  We pack Uganda broccoli in minimum 10-kilo produce boxes that can contain a minimum of 10 and a maximum of 18 pieces at a go. The boxes usually measure 1/9th of a bushel in size.  We usually pack the produce with some six inches of the stalk protruding. We finish off with ice injection onto the cartons to keep them in a fresh, humidified condition.

We store broccoli from Uganda at 0° Celsius while maintaining the vegetable in an unfrozen condition. Since it is generally cold climate produce, it does not necessarily freeze when refrigerated at this temperature. Stored this way both in the cold room and in transit, it can remain in a perfect condition for the next three to four weeks.   We also offer frozen broccoli under temperatures below zero degrees Celsius for a long duration such as during sea shipment. We prepare the cargo by washing and trimming the heads and stalks.
