The next step of processing Kenya macadamia oil involves cracking the hard shells using cracker machines. These are usually steel rolling equipment that shell the nuts by friction. Though mechanical, the process is very well guided so that the kernel inside still stay intact after outer shelling happens. After removing kernels, we then sort them from foreign dirt and shell particles. The final step before distilling the oil is grading the kernels according to size, health and general appearance. Grade 1 goes into the market as whole nuts whereas Grade 2 serves as the oil-producing nuts or for enriching chocolate and other commercial foods.
