Tomatoes were initially grown in central and south America. Morocco is the world’s largest tomato producer and exporter. The output of tomatoes for export in Morocco in 2015\2016 was one hundred thirty million tonnes. They are three types of tomato production firms in Morocco: industrial, premier and seasonal tomatoes. Premier tomatoes are grown for export with most of the products destined for markets in Canada, the European Union and Russia among others. Ripe tomatoes are bright red. For export, the fruit harvesting takes place when mature but unripe.
Harvesting is done by gently twisting the fruit off the stalk. Tomatoes are not stored refrigerated as they spoil and lose quality. Ethylene gas helps in the ripening process, though such products are of poor quality. Tomatoes are a healthy food due to their high content of antioxidants. They also contain vitamins A, C and K, iron, calcium, potassium, and folic acid.
