In Togo, Chicken farming is the most common type of poultry owing to the relative ease and low cost of raising them. In comparison to other domestic animals, chickens have become prevalent throughout the cuisine of Togo cultures.

  3. Jersey Giant; are purebred and weighs around 5.8 kgs on an average but grow at a lesser pace than similar breeds of boilers. This breed comes in blue, black and white colours.
  4. Orpington; is a heavy chicken breed that grows up to an average weight of 3.6 kgs for the female. They are good layers but are mostly used as broilers due to their fantastic flavour and the tenderness of their meat. These birds have a short back with curvy shape along with u-shaped underline and large body.

 

Chicken recipes are plentiful in Togo, and chicken meat is available all year. Chicken should be stored at a low temperature outside of the temperature zone in which bacteria that cause foodborne illness grows quickly. The danger temperature zone is a range between 45 and 60 degrees Celsius. Raw chicken can be stored in the refrigerator for several days. Chicken meat is mostly packed frozen in carton boxes of 15 to 20kgs with chicken wrapped with polythene sheets.
