The avian influenza has had a major impact on egg prices in the United States since 2022, and this has significant fluctuations in supply and cost. In 2022, the outbreak led to a sharp decline in layer hen numbers,which dropped by 12 million, and in turn reduced egg production by 2 billion units to 109.5 billion. This supply shock caused egg prices to double compared to 2021. While the outbreak subsided slightly in 2023, it surged in 2024 and continued into 2025, creating new shortages. As a result, by early February 2025, both wholesale and retail egg prices rose risen significantly, with the average retail price reaching $4.15 per dozen. This is more than double the $2 price seen in 2021.
